Spinach based Vegetable Soup


  • Onion chopped
  • Garlic crushed
  • Red Pepper (1/2) chopped
  • Courgette chopped
  • Carrot chopped
  • Chicken stock (home made)


  • Soften the onions and garlic until the onions start to go translucent
  • Add chopped courgette and carrot
  • Add chopped red pepper
  • Toss in the Spinach and allow to wilt
  • Add stock
  • Bring to the boil then simmer until carrots are softened
  • Blend
  • Add seasoning (salt and pepper) to taste
