Salmon with Leeks, Peas and Courgette Ribbons

Ingredients:

  • Salmon fillet
  • Leek chopped
  • Peas
  • Courgette sliced into ribbons
  • Lemon slice
  • Butter

Method:

  • Cook salmon in tinfoil parcel with a little butter
  • Melt butter in frying pan
  • Add leeks allow to soften
  • Add courgette ribbons
  • Pour boiling water over your peas leave for 3 minutes
  • Serve with a slice of lemon!
